Raspberry Walnut Chicken Salad

Directions
Use leftover chicken (grilled is best) or cook chicken breast without skin or bones. (approx. 5 minutes each side). Chop 1/2 chicken breast into bite sizes pieces.
Wash and dry romaine lettuce (use a salad spinner!) Pull apart and place into large salad bowl.
Top lettuce with chopped up chicken and raisins.
Wash (peel if you like, or leave peel on. I took it off) an apple, remove core and also cut up into bite size pieces.
Place apple pieces over raisins and drizzle salad with 2 tablespoons of Wishbone Light Raspberry Walnut Vinaigrette and serve immediately. Enjoy!
Serving for one, makes a complete meal. Great for a warm summer day.
