Ingredients

Hershey's pure 100% cocoa powderyour choice peppermint, mint or other flavor extractUnsweetened applesauce (cant use pumpkin, not sweet enough)Honey, agave or other liquid sweetener
Mix all ingredients together in bowl, spread thinly and refrigerate for about 40+ minutes. I had to transfer my bowl in the freezer for the last couple 15 minutes, I'm not sure why the mixture wasn't stiffening up correctly :\
Then took about 1 tbsp of the hardened(ish) mix and rolled little balls, place on wax paper and refrigerate again. These truffles always want to melt into goo!
Serving Size: my downsized recipe (approx 1/3 of orginal) made 4 1 inch truffles
