Hearty Split Pea & Veggie Soup

1 c dried split peas, uncooked (green, yellow or a mix)1/2 c dried lentils, uncooked1/3 c barley, uncooked1/4 c pastini pasta, uncooked8 c chicken stock1 lb turkey kielbasa, cut in bite-sized chunks1 28-oz can diced tomatoes16 oz frozen mixed vegetables3 c diced potatoes (skin on)2 T salt-free seasoning1 bay leaf
Combine all ingredients except pastini in a stock pot. Bring to a boil, then reduce heat and simmer for several hours until potatoes are tender. Add pastini in the last 15 minutes of cooking. Soup will be thick. Add more water as needed to thin to your preference. Remove bay leaf before serving.
