Tender Tummy Mock Potato Soup

1/4 Cup Unsalted butter1 TBSP Namaste GF Italian Herb coating Mix1/4 Cup Brown rice Flour1.5 Cups Chicken Broth (Low sodium works too)1/2 Cup Half and Half (or sour cream)
Melt butter over medium heat in a medium sized pot.
Add in Namaste GF coating mix and brown rice flour. Stir with a whisk. Let sit for about 1 minute to two minutes (This is really just for coloring, you can skip this if you want)
Add in chicken broth and whisk vigorously! Turn up heat a notch or two to make this part go a little faster. Let sit for about a minute or two until the soup starts to bubble and thicken. Whisk often!
Add in half and half or sour cream. Whisk again to mix well. Whisk the soup often until it's as thick as you like.
Pour into a large bowl and enjoy.
