Spicey Potato Parmesan Crustless Quiche

Ingredients
2 medium baked potatoes (must be cooked)1 egg1/4 cup egg white1/2 c shredded parmesan cheese2 TBSP onion, chopped1/2 jalapeno, chopped1 pat of butter (1" sq, 1/3" high)
Directions
Cut the baked potatoes lengthwise into 8 wedges each. Mix the eggs with cheese in side bowl. Heat a small frying pan with 1 pat of butter and onions and jalapenos. Saute for few minutes until onions look see through. Turn of heat. Quickly lay the potatoe wedges in pan (arrange like orange slices) over the onions and jalapenos. Pour the eggs and cheese over the potatoes. Cover and allow the heat from pan to cook.
