Crustless Pumpkin Pie

1-15 oz. can pumpkin1 can (12 oz.) evaporated milk (skim, if preferred)2/3 cup Egg Beaters or 3 egg whites1 tsp. vanilla (or to taste)2 tsp. pumpkin pie spice (or cinnamon and nutmeg to taste)Dash of salt1/2 cup Splenda (or 20 packets)
Preheat oven to 400 degrees.
Combine all ingredients and stir until well mixed.
Spray pie pan with cooking spray.
Pour mixture into pie pan.
Bake at 350 degrees for 45 minutes or until fork inserted into pie comes out clean.
