1/2 cup Cannellini beans, drained and rinsed1/2 cup black-eyed peas, drained and rinsed1/2 cup fava beans, drained and rinsed1/2 cup lima beans, drained and rinsed1 red bell pepper, diced1 small bunch flat-leaf parsley, chopped2 tablespoons olive oil1 teaspoon ground cuminJuice of 1 lemonSea salt and freshly ground pepper, to taste
Combine all ingredients in a large bowl and mix well. Season to taste.
Allow to sit for 30 minutes, so the flavors can marry together before serving.
