Grandma's Spinach Artichoke Casserole, Original version with no calorie cutting

3 packages of frozen, chopped spinach, cooked without salt, well-drained (this is key--- use your hands to wring it out)2 cans of artichoke hearts, drained, lightly chopped1 stick of butter, melted1/2 cup red or sweet yellow onion, finely chopped16 oz container sour cream1/2 to 1 cup grated Parmesan Cheese (nutritional info uses the larger amount) opt: salt and pepper to taste (nutritional info does NOT have seasoning)
Preheat oven to 375. Lightly spray a 3 quart baking pan with PAM or similar product. Set aside. While spinach and artichokes are draining, saute the onion in the butter in a small pan. In a large mixing bowl, combine spinach, artichoke hearts, onion mix, sour cream, and 1/4 to 1/2 cup grated Parmesan cheese. Mix thoroughly; pour into prepared baking dish, distributing evenly. Sprinkle with 1/4 to 1/2 cup remaining cheese. Bake for 30 to 45 minutes until top is browned. Reheats well. Can be made up to two days ahead.
