Maple Custard with Fresh Fruit

2 egg yolks1 1/3 cups low fat milk1/3 pure canadian (that's right...canadian) maple syrup2 tbsp cornstarch2 peaches, pears, bananas, blueberries, thawed (from frozen) mixed fruit.....the possibilities are endless
1. In a small saucepan, whisk together egg yolks, milk, maple syrup, and cornstarch until smooth. Cook over medium-low heat, whisking constantly, for 2 to 4 minutes or until boiling & thickened
2. Arrange fruit in 4 individual serving dishes; pour hot custard over. Cover & refrigerate for 1 hour or until cool.
Then....enjoy without any of the guilt!!
