Spinach egg casserole

Ingredients
4 eggs8 egg whites6 cups chopped spinach1 cup chopped onions .5 cup chopped mushrooms.5 cup part-skim ricotta cheese1 tsp salt1 tbsp Dijon mustard.
Directions
Sauté onions and mushrooms until soft. Add spinach and stir until wilted. Spread into a lightly greased 9x11 pan.
Mix eggs, whites, ricotta cheese and mustard. Pour over veggies in pan and bake at 350 for 40 minutes.
