Crustless Leek Quiche

2 small to medium leeks, chopped, using white and green2 small scallions, chopped1Tbsp olive oil1 cup whole wheat bread crumbs3 egg whites3 eggs250 ml (9 oz) low-fat milk50 grams (2 oz) Swiss cheese, grated2 spring onions, chopped1 tsp salt1 tsp pepperNutmeg (optional, to taste)Oil for greasing the ramekins
Preheat the oven to 190°C (375° F).
Saute the scallions until glassy, and add the leeks. Cook both until the leeks are soft.
Pour into a large bowl to cool and combine with the bread crumbs.
In a separate bowl, whisk together the egg whites, whole eggs and milk.
Add the egg-milk mixture to the leeks and combine. Finally, add the grated cheese, salt, pepper and nutmeg.
Portion the mixture into six pre-greased ramekins and bake for 20 minutes, until the quiches are golden brown and set.
Serve with a green salad for a light lunch or dinner.
