Vanilla Pudding

3/4 cup sugar1/4 cup cornstarch2.5 cups milk (I used Half and Half for a really rich pudding)1 Tablespoon vanilla (I used pure vanilla, no alcohol)2 Tablespoons unsalted butter, cut in small pieces1/4 tsp salt3 egg yolks
Combine sugar and cornstarch in a 3 qt saucepan and place over medium heat. Gradually stir in the milk and cook until mixture thickens, about 7 or 8 minutes. Be careful not to cook too long. Cornstarch loses its thickening ability if it is cooked for too long. Remove pan from heat and whisk in the vanilla, salt, and egg yolks until smooth. Return pan back over heat and bring to a simmer, stirring constantly with a wooden spoon. Cook for 1 minute. Be sure you are stirring the bottom of the pan. Remove from heat, stir in butter.
You can pour into cups or layer into cups with slice bananas or other fruit of your choice. Chill for at least 3 hours.
