Healthy Almond Macaroon Cookies

Ingredients
1 egg1/4 teaspoon ground cinnamon1 small banana4 dates3/4 cup ground almonds1 tbsp tahini2 oz water1/4 tsp baking powder1 medium pear
Directions
Preheat oven to 350 deg F.

Separate the egg yolk from the egg white.
Beat the egg white until frothy.

If you have a vitamix on hand, mix all the other ingredients, including the egg yolk in it.

Otherwise, chop up the pear, mash the banana, and dice the dates. Mix these with the remaining ingredients. Then gently fold the mixture into the egg white.

Place the mixture by a spoonful on parchment paper on a cookie sheet. Bake for about 12-15 minutes. Enjoy!
