California Omelet

Ingredients
1 egg2 egg whites1 Tbsp. 1% milk1/4 of shredded 2% cheese (Mexican blend)1/2 romo tomato diced3 whole baby bella mushrooms diced.1/2 c. baby spinach shredded1 Tbsp. turkey bacon bits1/4 thinly sliced avocado1 Tbsp. plain Greek yogurt1 tsp. light butterdash of salt and pepper
Directions
Beat eggs with milk. Then add 1 tsp. butter to nonstick skillet cook over med. heat..Add eggs,when eggs start to set flip omelet. Then add 1/2 of the cheese, tomato, mushroom, bacon bits and spinach.Cook 2 min. then fold in half. Top with rest of the cheese, Avocado and 1 Tbsp. of yogurt. Add dash of salt and pepper.
