Laurie's Citrus Lentil Salad

Ingredients
1/3 cup Roasted Red Peppers (jarred, in water)1 cup canned green lentils (rinsed and drained)1 tsp VE Minced Garlic1 stalk of celery, chopped (including leaves)1 tbsp fresh chives, chopped1 tbsp fresh parsley, chopped1/2 tsp fresh thyme, removed from stem2 tbsp feta cheese, crumbled3 tbsp extra virgin olive oil3 tbsp lemon juice1 tsp dried sweet basil1/2 tsp cayenne pepperSalt & Pepper, to taste
Directions
Mix first 8 ingredients together in a bowl.
In a separate bowl whisk together olive oil, lemon juice and seasonings to make a dressing.
Pour dressing over lentil mixture and stir until well coated. Refrigerate 30 mins (or longer) before serving.
