Low Carb Mushroom Gravy

Half white onion (chopped)10 oz fresh mushrooms (sliced)4 cloves garlic (diced)1/2 tsp red chili pepper flakes1 tsp thyme1 tsp olive oildash salt1 tbs olive oil4 tbs coconut oil1/4 cup canned coconut milk1 1/4 cups broth1/2 cup almond milk2 tbs soy sauce1 tsp arrow root powder1 tsp xanthan gumdiluted in water till smooth
With 1 tsp olive oil in an iron skillet on medium high heat sauté the onions, mushrooms, garlic, red chili pepper flakes, and thyme with a dash of salt, till the onions are translucent.

in the same skillet add the 1 tbs olive oil, 4 tbs coconut oil, 1/4 cup coconut milk, 1/4 cup broth, and the arrow root - xanthan gum you have diluted in water.
whisk till smooth.
now add the rest of the vegetable broth, almond milk, soy sauce, and the sautéed mushrooms you put off to the side and let these cook on medium high heat. Constantly whisking, bring up to a soft boil.
Constantly whisk for about five minutes at a soft boil till your mixture thickens to your liking.
