Broccoli Cheese Protein Soup

Ingredients
4C low sodium chicken broth4C 2% Milk2 Potatoes, cut small2 15oz cans White Beans4C broccoli, chopped1/2 C shredded Mexican Cheeseblack pepper to taste
Directions
Heat broth, milk, potatoes, and beans in stock pot until potatoes are cooked through. Puree in blender or with hand blender. Add broccoli, cheese, and pepper. Simmer on med. until broccoli is done.

    I love creamy soups with chunks of veggies or pasta. It helps me feel like I'm actually eating a meal as opposed to having just a bowl of soup. I always use pureed beans or potatoes to thicken them. Frozen broccoli can be heated in the microwave and added to the cooked soup - saves a little time - 1/5/14
