Fluffy Oven Egs & Bacon

Preheat oven to 375 degrees.

Cook bacon until almost crisp. Add onion, cook, stirring frequently, until bacon is crisp. Drain. Spread bacon/onion mixture in bottom of round casserole dish.

In separate bowl, combine Bisquick, eggs, milk, salt and pepper. Whisk until smooth. Slowly pour mixture over bacon. Sprinkle shredded cheese on top.

Bake in oven, uncovered until knifen enter comes out clean, about 35 minutes. Serves 4-6.
