Breakfast Cookies - Daniel Fast

1 1/2 cups rolled oats1/2 cup unsweetened coconut flakes1/4 cup whole wheat flour1/2 tsp cinnamon1/2 tsp salt1/2 cup almond butter3/4 cup raisins3 ripe bananas, mashed 1/4 cup melted coconut oil1 tsp pure vanilla
Preheat oven to 350F. Grease pan with coconut oil.
In large bowl, combine oats, almond butter, coconut flakes & flour. Add salt, cinnamon & raisins stirring until evenly mixed.
In another bowl combine coconut oil, mashed banana & vanilla. I actually used a hand blender to get it all mixed and the banana almost pureed.
Pour wet ingredients over dry ingredients and stir until well combined.
Use your hands to form into cookies. Makes 12-15 depending on the size. Bake for about 20 minutes or until edges are golden brown.
