Rumbamel's Vitamix Potato and Chicken Soup with Spinach

-1 C 99% FF chicken broth, I use Aldi brand-1 1/2 C FF evaporated skim milk-1/3 C or half of a small onion chopped-519 g cooked baked potatoes, devided, about 3 med.-1/8 t dried rosemary, optional-1/3 C frozen or cooked spinach, chopped-5 oz cooked, chopped boneless and skinless chicken breast-salt to taste
---Cook your potatoes and chicken ahead of time. Put your chicken broth, evaporated milk, onion, rosemary (if desired), and 346g of your potatoes in the Vitamix in that order!! Secure the lid.
---Turn on Variable 1 and slowly go to Variable 10 then High. Blend for 4-5 min.. Turn to Variable 3 and then take lid plug off and put in the spinach and blend for about 15 seconds. Remove from the blender and add your remaining 173 g of chopped potato and your 5 oz of chopped chicken. Stir and and heat if needed. Serve immediately.
