Savory Sweet Potato Breakfast Casserole

Ingredients
12 large eggs3/4 of a 5" sweet potato1/4 cup Gorgonzola Cheese1 med yellow onion3 cloves garlic1 TBSP Extra-Virgin Olive Oil3/4 Cup Parmesan Cheese1 8 TBSP stick of salted butter
Directions
Saute onion and garlic in the oil. Shred the sweet potato and mix. Beat eggs with a mix and pour over the potato mixture. Mix parmesan cheese fairly thoroughly and top with gorgonzola cheese.

Serving Size: Cut into 8 servings
