Artichoke, Chickpea and Quinoa Salad

Ingredients
1/2 Cup dry quinoa1 lemon (juice + zest)1 tsp Dijon mustard1 large garlic clove, minced1 tsp dried sage1/4 C olive oil14 oz can artichoke hearts in water19 oz can chickpeas 3 plum tomatoes
Directions
Prepare quinoa according to package instructions. In the meantime, whisk together juice of lemon plus zest, mustard, sage, and olive oil. Drain and rinse artichokes, dice and add to mixture. Drain and rinse chickpeas and add to mixture. Add tomatoes, diced. When quinoa is cooked, add to mixture.
