Black Olive Beef Stew

2 lbs beef stew20 French Shallots30 pearl onions8 garlic cloves200g bacon2 tbs flour1 bottle of red wine1 cup Demi-Glace gravy mix (Knorr)1 small can of tomato paste1 cup of black olives, pittedfresh rosemary fresh thyme
In a dutch oven, cook the bacon until colored. Add the shallots, onions and garlic cloves and cook for 5 minutes. Put the onions aside.
Pour the flour on the beef and cook in the bacon fat until cubes are brown. Pour the wine on the beef, scrape the residues and let simmer for 5 minutes. Add the demi-glace, cover and cook in the oven for 2 hours at 325.
Add the tomato paste, black olives and fresh herbs, cover and cook for an extra hour.
