Ingredients
2 extra large eggs1 medium ripe banana1/2 tsp VE Ground Cinnamon
Directions
Mash banana in a bowl with a fork or a hand blender. Whisk in eggs and cinnamon until fully incorporated.
Heat a non-stick frying pan over medium heat and spray lightly with cooking spray.
Pour mixture into pan and allow to set. Cover and cook until set (approximately 2-3 mins for extra large sized pancakes). Once set, flip and continue cooking on the other side.


Serving Size: Makes 2 Extra Large or 6 Small "Pancakes"
