Wild Rice Quinoa Composed Salad

Ingredients
Quinoa, 1/2 cup dryLundberg Wild Blend Brown Rice, 1 cup dryCherry Tomatoes, 12, cut in halfShiitake Mushrooms, 1 cup*Diamond Kosher Salt 1 tbsp*Balsamic Vinegar, 2 tbsp*Extra Virgin Olive Oil, 3 tbspChickpeas, 1 can, drainedBeans, black, 1 can, drainedParsley, dried, 1 tbsp*Artichoke Hearts, 6, chopped
Directions
Cook rice and quinoa per instructions on bag or box. Drain and rinse chickpeas and black beans. Rinse cherry tomatoes and cut in half; cut up artichokes to size desired. Combine in large bowl adding salt as layers are introduced. When combined, dress with olive oil and vinegar and garnish with parsley.
