Poblano peppers, seeds removedChorizo, sauteeed in pan with a bit of oil, strained Oaxaca cheese' sliced
Make a lengthwise slice in pepper, remove seeds, set aside
Brown chorizo in pan with oil, strain
Stuff pepper with cheese followed by chorizo
Heat shallow pan with layer of oil, toast peppers turning occasionally until cheese is melted and skin is dark green and crinkled
Serving Size: 1 stuffed pepper
