Zesty Italian Fried Red Potato

Ingredients
1 tbsp olive oil2 tbsp no salt butter or margarine1 lb red potatoes1tsp garlic, minced1 tsp itailian seasoningssalt and pepper to taste
Directions
Take and cut up red potatoes, washed and cut into bite size pieces, put in pot and boil for 5 minutes of until fork tender
strain and place aside
place oil and margarine, garlic, and italian season until fuse together then put potatoes, season with pepper& salt. Fry 15 - 20 min until brown on both sides. Serve you can sprinkle on parmesan cheese but make sure you add the calories. Yummo!!!!!!!!!!

    Delicious! I had a baked version of this, and was very pleased how this turned out (not having to use the oven). I used 1 Tbsp light marg w/ the oil, and garlic clove--it needed about 3/4 tsp of salt (I used 8-10 potatoes)... - 9/22/08
