Light Cinnamon Popovers

5 egg whites1 cup skim milk, at room temperature1 cup flour2 tsp cinnamon, or to taste2 Tbsp butter, melted
1. Preheat oven to 450 degrees.
2. Grease and lightly flour 6 custard cups (3.5" diameter) or popover tins. Lightly dust with flour.
3. Combine all ingredients in a blender. Blend 15 seconds at medium speed. Divide mixture evenly between cups.
4. Bake at 450 degrees for 20 minutes
5. Reduce oven temperature to 350 degrees and bake an additional 25 minutes.
6. Pierce side of each popover with a sharp knife and bake another 5 minutes.
7. Serve with favorite spread. Leftovers can be frozen and reheated 15 minutes at 350 degrees.
