Pittsburgh Potatoes

3 cups potatoes, peeled and diced2 small onions, minced2 tsp.salt1 can pimientos, diced and drained4 cups of white sauce1 1/3 tsp.salt1/2 Tbsp. pepper1 pound mild cheese1 cup cracker crumbs4 tsp. butter White Sauce:8 Tbsp. Butter8 Tbsp Flour4 cup Milk
Preheat oven to 350%. Cook potatoes, onion, and salt in boiling water for 5 minutes. Drain: add pimientos and place in greased cassrole dish.Make white sauce. Add pepper, salt and cheese. Pour over potatoes. Sprinkle with cracker crumbs and dot with butter. Bake for 30 minutes or until lightly brown.
White Sauce: Melt 8 Tbsp; butter in a skillet: blend 8 Tbsp;flour and Gradually add 4 cups of milk stirring constantly. Reduce heat: cook 3 minutes longer.
