Chicken Parmigiana

Ingredients
4 or more chicken breasts cut into strips(I only use 2 for my 2 person home)Olive oil just enough to brown chicken1 small onion or 1/2 medium onion1 tomatomushrooms (whatever you like)green or black olives sliced (whatever you like)1/4 teaspoon minced garlic1/4 cup vermouth or cooking sherry (I have also used red wine vinegar)1/2 package shredded mozzarella or mixed cheese (I make mine without the cheese, since my husband can't have dairy)
Directions
Heat oven to 350.
I add all the ingredients together in a Corningware dish and bake them for 30-45 minutes. Sprinkle the cheese on and cook for the last 2 minutes. Serve over rice, and add your favorite veggie.
