Marcella Hazan Classic Tomato Sauce

Ingredients
2 pounds fresh paste tomatoes Or 1 can 28 oz good Italian plum tomatoes (I use Cento) 5 tbs butter1 whole onion, peeled and cut in halfSalt to taste
Directions
Combine the tomatoes, their juices, the butter and the onion halves in a saucepan. (I like to puree first) Add a pinch or two of salt.

Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes, a bit less if puréed first Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed.
3.
Discard the onion before tossing the sauce with pasta. (I eat it!)
This recipe makes enough sauce for a pound of pasta.

    This is a lovely method for delicious pasta sauce! It's a go-to in my house. Brighten up the canned tomatoes with a couple of teaspoons of lemon juice and a teaspoon of sugar. - 4/13/19
