Brown Rice, long grain, 3 cups cookedBlack Beans, i can, drained and rinsedButternut Squash, 2.5 cup, cooked and mashed or cannedOnions, raw, .5 cup, slicedBell peppers (yellow, red, green), .75 cup sliced thinCumin seed, 1 tbspChili powder, 1 tspYour favorite hot sauce, 1 tspCilantro, raw--your desired amount as a garnish
Cook rice according to package directions for 3 cups. Add beans, squash, onions, and peppers and stir. Cover with a lid and cook on low 5 min., stir, then cook for another 5 min. covered on low heat.
Add cumin, hot sauce, and chili powder, stir. Serve in tortillas or in a bowl and top with fresh cilantro. Other tasty garnishes include avocado and crushed tortilla chips.
