Oatmeal Waffles Based on a Theme by Paganini

1 c. all purpose flour1/2 c. wholewheat flour1/2 c. old fashioned oatmeal2 t. baking powder1/2 t. baking soda1/4 t. salt1/2 t. ground cinnamon2 large eggs, beaten slightly1 1/2 c. buttermilk6 T. unsalted butter, melted and cooled4 T. brown sugar
Combine the dry ingredients (except for the brown sugar) in a large bowl.
Combine the eggs, buttermilk, melted butter, and brown sugar in a smaller bowl.
Combine the dry and wet ingredients swiftly.
Using a half-cup measure, pour the mixture onto the center of a waffle iron and cook according to the iron's directions. Some will stick to the bottom of the half-cup measure, but don't worry about it. You can scrape it out for the last waffle if you like.
Serving Size:�Makes 6 medium sized round waffles (about 8" in diameter)
