Squash Galette

Ingredients
2T olive oil1 onion sliced in thick half moons1 package (12 oz) pureed butternut squash1 refrigerated pie crust ( 9 inch pie)1/4 cup crumbled blue cheese5 sage leaves or 1 t.dried sagefreshly ground pepper
Directions
Heat oven 375
roll out pie crust on parchment paper
heat olive oil in large skillet, add onion
cook sqaush acoring to packet directions and mix squash and onions in skillet
spread squash onion mixture in middle ofcrust
leave a border of 1.5 inches wide
sprinke with blue cheese and fresh sage
add plenty ofpepper
fold border of the crust over the edge of the filling covering 1/4th of filling leaving middle exposed
bake 30-35 minutes till crust is golden brown
slice into wedges like a pie.
