Spicy Thai Salad

Ingredients
2 chicken breasts, grilled and chopped1 lime1 orange1/4 cup soy sauce1 TBLS honey1 finely chopped jalapeno1 TBLS sesame oil1 finely chopped garlic2 stalks chopped green onion1 tsp rice wine vinegarromaine lettuce1 small cucumber chopped1 cup cherry tomatoes, halved1 cup shredded cabbage and carrots (use slaw bags)1 cup boiled rice noodles sesame seeds
Directions
dinner for two:
Grill the chicken the way you normally do and chop into small bite size peices or strips (two breasts). In bowl combine juice of one lime, juice of one orange, 1/4 cup soy sauce, 1 tabls honey, 1 finely chopped jalapeno, 1 tabls sesame oil, 1 finely chopped garlic, 2 stalks chopped green onions, 1 tsp rice wine vinegar. put your cooked chicken in mixture and let sit for 30 minutes. meanwhile, in 2 large bowls put chopped romaine lettuce, cucumber, tomatoes, shredded cabbage and carrots and a half cup of boiled rice noodles (you can use thin spaghetti noodles, too but I really like the rice noodles!)
take the dressing with chicken peices and divide over the two bowls and serve with sesame seeds on top.

I love this and also do it with leftover steak and pork.

    I made this tonight but omitted the lettuce and served it warm with the rice noodles.Had no jalapenos so I used Thai chili paste instead.It was a hit, even my 5yr old loved it!! Thanks for posting!! :) - 1/9/10

    OMG!! I made this last night with leftover turkey breast, it was amazing! My DH gave me a kiss and told me how much he loves my cooking :) W'll definitely be eating this at least once week...hmmm maybe we'll try beef next time! - 10/14/09

    Nice and tangy! I used 1/2 the sauce as a marinade before cooking chicken and the rest as a dressing. Too bad I forgot the sesame seeds. - 12/15/08

    Made this last night for my husband and I.
    I ommited the oil for less calories and used japanese soba noodles. I also put all the ingredients for the dressing in the food processor to avoid chunks of jalapeno.
    It was so good! I would definately make it again, want to try it with Beef. - 6/18/08

    Yummy! I also used half of the dressing as a marinade (30 minutes), then grilled my chicken. I served it over rice and steamed veggies and used the other half of the dressing for a rice sauce. It was great warm too! - 4/4/08
