1/2 cup unsalted butter, softened1/2 cup creamy almond butter1/2 cup honey2 large egg1 tablespoon vanilla2 cups almond flour1 cup coconut flour1 cup tapioca flour2 teaspoons baking powder1 teaspoon salt8 ounces semi-sweet chocolate chips
Preheat oven to 350 degrees. Beat first 5 ingredients (butter-vanilla) in a standing mixer or hand mixer. In a separate bowl, mix dry ingredients. Mix dry into wet, then add chocolate chips and mix well with clean hands. Form into 2 tablespoon balls and place onto a cookie
sheet that’s been greased or lined with parchment paper or a Silpat. Bake about 12 minutes, or until they are golden brown on bottom and just cooked through.
