Grandma Tune's Corn Pudding

Ingredients
1 can cream corn, undrained1 can niblets corn, undrained (no salt added)8oz sour cream1 stick of butter1 egg1 package "jiffy" corn muffin mix
Directions
Makes approx. 10 servings.

- spray 2 qt baking dish with cooking spray
-melt butter in lg bowl, add egg and beat well. Add corn and stir. Beat in Jiffy mix. Fold in sour cream.
-Bake uncovered 350 degrees for 45 minutes or until top browns and pudding sets.

- Try to make this lighter with butter alternatives, fat free sour cream next time. Was made with regular sour cream and regular unsalted butter.
