Creamy Chicken Black Bean Bake

1 Onions, chopped 1 Jalapeno Pepper, chopped w seeds1 Sweet Pepper, chopped8oz Boneless Skinless Chicken Breast - diced1 can Black Beans, drained & rinsed1/4 cup dry Quinoa 1/2 C Cottage Cheese, 1% 1/2 C medium Salsa1/2 C 2% Shredded Cheddar Cheese
In oven-proof skillet coated with non-stick spray saute onion and peppers until slightly soft. Add chicken and cook until opaque. Stir in drained beans, dry quinoa, cottage cheese and salsa, add 1/2C water if mixture looks dry - 1/4C if not. Season to taste.
Bake for 25 minutes or until bubbly, top with cheese and bake five more minutes or until melted.
