Dana's Scrumptious Healthy Spinach Apple Turkey Quiche Cups

Ingredients
Non-stick baking spray1 Tsp. Honey2 Tbsp. Butter2 Tbsp. 2% Milk˝ Cup Mozzarella Cheese2 Medium Apples3 Cups Fresh Spinach Leaves4 Eggs1 Pack Turkey Bacon
Directions
Preheat oven to 350.
Peel, core, and slice apples into thin strips.
Sauté apples in butter until soft.
Add spinach to wilt.
Combine eggs, milk, and mozzarella cheese and blend well.
Fold apples and Spinach into egg mixture.
Place turkey bacon in an ‘x’ into each cup of a muffin pan
Spoon egg mixture into cups on top of turkey to fill cups.
Fold ends of turkey over cups to enclose the egg mixture.
Cook for 25 minutes or until bacon browns and egg is solid.


Serving Size: Makes 8-10 muffin cup servings
