Curried Hominy

Ingredients
28 Oz White Hominy1 Large White Onion2 Tbsp EV Olive Oil1/2 Cup Water1/4 Cup Greek Plain Yogurt1/4 Cup Cilantro leaves chopped5 Cloves Garlic, sliced2 Tbsp ginger (1 Tbsp fresh ground)1 Tbsp curry powder1 Tbsp kosher salt
Directions
Start by heating the olive oil on med-high in a deep skillet until the oil is 'shimmery'. Add the onions, garlic, curry and salt. Cook until onions are brown, approximately 5-7 minutes

Add hominy, ginger, cumin and water. Cook until heated through, about 5 more minutes.

Remove from heat and stir in yogurt and cilantro.

I prefer to use greek yogurt because it is strained and thicker, it is also fat free and high in protein.

Makes 4 cups.
