    2 lb. fresh haddock, skinless
    1 cup sliced onion
    1 cup sliced celery
    3 tbsp. butter
    1 tsp. curry powder
    1 tsp. salt
    pepper to taste
    8 oz. light cream


Fish should be moist when done. Do not allow fish to become dry.


Preheat oven to 350 degrees. Grease a baking dish and place haddock (skin side down if not skinless) in dish. In a large skillet, melt butter and sweat onion and celery until tender (about 5 minutes). Add cream, curry powder, salt and pepper and stir until mixture is hot and begins to thicken. Pour mixture over fish and bake for 30 minutes.
