2 medium red potatoes4 slices small round deli ham1/8 cup shredded cheddar1/8 cup corn kernels1/8 red pepper1/8 cup onion1 tbsp country crock
Pierce potatoes, bake in microwave 5 minutes. Cut off tops and scoop out middles. Chop ham and cut corn off the cob. Dice other veggies. Microwave or saute in pan with Pam till soft. Mash scooped out potato with remaining ingredients. Stuff mix back into potato shells. Bake in toaster oven for 20 minutes at 375. Broil last few minutes to brown on top.
