Steph2003's Cooked Cabbage

Ingredients
1 large head of Cabbage, 1-2 tbsp bacon grease (used lard to calculate nutritional info)1 tbsp crushed red pepper1 tbsp salt water*Note you can also chop an onion or fresh garlic and throw in there too.Also, for crock pot cooking just chop the cabbage into about 4 large pieces and cook for about 8 hours on low.
Directions
Makes about 8, 1 cup servings.


Fill a large pot (I use an 8 qt. pot) 3/4 full of water, turn on medium heat.

Chop cabbage into bite sized pieces and add to pot.

Fry 4-6 slices of bacon to get the grease, and throw out the bacon.

Stir in salt, red pepper, and bacon grease, then cover and boil until cabbage is very tender, about 2 hours.

Dip out cabbage with a little of the water if you're planning to put in in the frige for later, and disgard the remaining water.


*Note the bacon grease really adds a great flavor, but you can substitute a cube of beef, chicken, or vegetable bouillon instead, and just leave out the salt.


Also, I use small amounts of bacon grease when cooking other things like turnip greens, so I usually fry a whole pack of bacon and save the grease in a dish in the fridge. When it's cold it's so easy to measure out a tsp or tbsp.
