Slow Cooker Chicken, Sweet Potato and Kale Stew

Ingredients
1/2 pound skinless chicken breasts, cut into chunks1 yellow onion, diced1 carrot, peeled and cubed1 medium sweet potato, peeled and cubed3 garlic cloves, minced1 cup low-sodium chicken broth2 tablespoons tomato paste or BBQ sauce1.5 tablespoons balsamic vinegar1 teaspoon Dijon mustard1 bay leaf1/2 bunch of kale, stems removed and broken into piecessea salt and fresh pepper to taste
Directions
Wash chicken and cut into chunk-size pieces and place uncooked into the pot of a 2-quart slow cooker.

On top of chicken, add diced onion, cubed carrots, cubed sweet potato, garlic, chicken broth, BBQ sauce, balsamic vinegar, mustard and bay leaf. Stir to mix everything together. Place slow cooker on high heat for 4-5 hours or until carrots and sweet potato are tender. In the last hour, add kale and stir to combine.
