Mushroom Barley Stew

Ingredients
1 TBS Olive Oil1 medium onion, finely chopped1 cup chopped carrots (about 2 carrots)1 clove garlic, minced1 cup uncooked pearl barley1 cup dried wild mushrooms, broken into pieces1 tsp salt1/2 tsp dried thyme1/2 tsp black pepper5 cups vegetable broth
Directions
1. Heat oil in a medium skillet over medium-high heat. Add onion, carrots and garlic; cook and stir 5 minutes until tender. Pour mixture into slow cooker.
2. Add barley, mushrooms, salt, thyme and pepper. Stir in broth. Cover and cook on LOW for 6-7 hours.
