Chicken with Cider Vinegar Glaze

Ingredients
3/4 c cider vinegar1/3 c maple syrup2.5 tbsp blackstrap molasses1 in. ginger root, peeled and grated finely8 chicken thighs, boneless and skinless
Directions
Preheat oven to 400 degrees.

Combine vinegar, maple syrup, molasses, ginger, chipotle powder and salt in a saucepan. Bring to a simmer and let reduce until liquid thickens and is about 1/2 cup.

Line baking dish with foil (helps with easy clean up) and spray with Pam. Salt and pepper the chicken pieces, then brush with glaze on both sides. Put in the oven to bake for 20-25 minutes or until internal temperature is 160 degrees.

Put on serving plate, brush with remaining glaze and serve.
