Homemade Chicken/Artichoke/lemon soup

Butter - 2 TBSOnion - 1/4 cup dicedGarlic - 2 cloves, mincedChicken Bullion Cubes - 2 Carrot - 1 medium carrot chopped or slicedArtichoke Hearts - quartered/marinated w oil 1/2 small jarLemon Juice - 3 TSPWater to fill pot(optional - sweet corn - I had leftovers from last night)seasonings - prepared mustard - 1 tspcilantro - 1 tspcelery salt - 1/2 tspblack pepper to tasteorzo - 1/2 cup
In medium sized kettle, spray with Pam and add 2 TBS Butter, minced onion and garlic, add 3 chicken tenders and brown. Add 2 chicken bullion cubes for flavor. Brown, remove chicken and dice, place it back in pot with quartered marinated artichoke hearts, one medium carrot cut up, (optional I had left over canned corn) add 6-8 cups of water, 3 tsp lemon juice and cook and simmer. Add 1/2 cup orzo, cook till tender about 15 minutes. enjoy - can add grated cheese if you like.
