Tony's Low-Cal Chili

Ingredients
1 Eggplant, peeled and chopped1 Med. Green Bell Pepper, chopped Zuchini, 2 cup choppedRed Onion Raw 1/2 cup Extra Virgin Olive Oil, 1 tbsp Feta Cheese, 1 TBSPN Jennie-O Turkey Turkey Italian Sweet Sausage 5 links Jalepeno, 2 tbspn chopped Pepper, black, 1 tsp Chili powder, 2 tbsp Bush's, Black Beans, 1 can cilantro (fresh), 1 bunch, chopped 3 large tomatoes, chopped1 can petite diced tomatoes
Directions
Take turkey out of casing and saute meat in a saute pan with 1 tbspn EVOO until meat is cooked through. Saute vegetables until el dente.
In a large pot, add turkey, tomatoes, vegetables and all other ingredients to pot and bring to a boil, reduce heat and simmer for 45 minutes.

Serving Size: Makes 10, 12oz bowls.
