Number of Servings: 4


    12 oz lean pork tenderloin cut into strips
    1 tsp to 1 tbsp Jerk Seasoning
    8 cups salad greens
    1 cup fresh diced pineapple
    1/4 cup sliced red onion
    For Dressing:
    1/3 cup lime juice
    1 tbsp olive oil
    1 garlic clove, minced


Cook pork strips & jerk seasoning in non-stick pan.
Divide salad greens, pineapple and onions onto 4 plates.
Top with cooked pork.
For dressing, whisk lime juice, olive oil & garlic and pour in equal portions over salad.

    Very Good
    Since I as looking for a warm salad, I grilled the pineapple and caramelized the onions. Warm winter main dish salad took me back to summer :) - 11/17/14
