Oat Apple Raisin Breakfast Muffins

Ingredients
*Flour, white, 1 cupOat Bran, .5 cupOats 1 cup*Splenda, 1 cupBaking Powder, 2 TBSP Better option: 2 tsp baking powder + 2 eggsCinnamon, ground, 2 tsp Salt, .5 tspNutmeg, ground, .25 tspPowdered Milk, 1 cupGround flax, 1/2 cupRaisins, .33 cup (not packed) OR Shredded coconutNuts, .75 cup choppedBanana, 1 cup mashed from frozenCoconut Oil, 2 tbsp Vanilla Extract, 2 tsp Water, 1/4 to 1/2 cupApples, 2 cups shredded Carrots, 1 cup shredded
Directions
Mix dry ingredients in large bowl. Add nuts, flax, raisins or shredded coconut.

Mix wet ingredients in medium bowl. Add shredded apples and carrots.

Mix wet ingredients into dry ingredients, mixing just enough to combine.

Scoop into muffin tins (filling flat for 18, or very tall for ~12), and bake at 350F for 20 minutes
